Vermouth IVO
An ONAV teacher, he follows the lessons of the course to become a taster, with a particular interest in fortified wines. He has numerous projects to give Vermouth back the role it deserves.
The main idea is called IVO, a Vermouth that can be seen as a real character. The name is derived from the last three letters of digest-IVO and aperit-IVO, perfectly representing its dual nature. Thanks to the ‘AMARICANTE’ tanning, it offers dry, savoury and bitter notes, ideal for the aperitif. The ‘SPEZIATA’ tanning, on the other hand, gives softness, sinuosity and fragrance, making it also perfect as a digestif.
