Micol Pifferi, from 2021 at the head of the family dairy Matricola 300 in Casalgrande (Reggio Emilia) of Parmigiano Reggiano, has a long past as an oncologist and practised as a doctor for years and years, until she decided to revolutionise her profession.
Today, that reciprocal relationship that can be established between doctor and patient is as missing as air, yet she would not go back.
What is Matricola 300?
‘We have a very short supply chain, all from the territory and the result of quality choices and in compliance with the Parmigiano Reggiano regulations. About 70% of the production is totally our own, about 30% from consortia of producers who embrace the same philosophy as us. We follow the entire production chain up to the final consumer, passing through the maturing process and the shop, because we also have a shop. On average we produce twelve wheels a day with different maturation periods, some as long as 70 months. We also organise tours to get to know our world’. Are there points of contact between your current work in the dairy and your work as an oncologist? ‘People and their health. You treat people, not diseases. In this a healthy diet is fundamental, it gives a sense of satisfaction and fulfilment for the mind as well as the body. Furthermore, I believe it is good to know the quality of the raw materials, the controlled supply chain, and animal welfare from the very beginning’.
