My name is Raffaello, I come from a tiny village in the Bolognese Apennines (which I like to call a Principality).
In my spare time I create Vermouth.
I am an ONAV teacher, I follow the lessons of the course to become a ‘taster’ concerning fortified wines. I have many ideas and projects to return Vermouth to its rightful place.
My flagship idea is called IVO, let me introduce it to you: IVO is a Vermouth, but it would be more correct to describe it as a character in a film. IVO are the three last letters of the words digest-IVO and aperit-IVO. And Vermouth, in my way of conceiving and above all, of making it, is exactly a combination of the two. It is a perfect aperitif, thanks to the dry, savoury and bitter notes given by the aromatisation of the ‘AMARICANTE’ tanning, and a perfect digestive, thanks to the soft, sinuous and perfumed sensations given by the second tanning, the ‘SPEZIATA’. But IVO is also and above all the name of my maternal grandfather, the one to whom I dedicated this product.
